Shrimp Sesame Noodles

There’s no need to order take out when you are just 30 minutes away from your new favorite dinner. This easy, flavorful and delicious recipe has become a weekly staple. I used shrimp as the main protein for this recipe, but you can swap out with chicken or any meat of your liking. Give this a try and you won’t regret it!

What you need:

2 packets of Ramen style noodles (I used the Trader Joe’s Squiggly Knife Cut Noodles)

8-10 oz shrimp, defrosted and tails removed

1 bell pepper

Green onion, to garnish

Chopped peanuts, to garnish

Sesame Peanut Sauce:

3 tablespoons soy sauce

2 tablespoons toasted sesame oil

1 1/2 tablespoons rice wine vinegar

2-3 teaspoons honey, to taste

2 tablespoons peanut butter

2 teaspoons sriracha or chili onion crunch

1 inch knob of ginger, grated

2 cloves of garlic, minced

1-2 tablespoons of water to smooth out the sauce

How to make:

  1. First, make the sesame peanut sauce. Whisk together all ingredients until smooth, adding 1-2 tablespoons of water to  achieve desired consistency. I like to make my own sauce instead of using the one provided in the noodle packet as it is tastier and has cleaner ingredients.

2. Boil a pot of water and cook the noodles according to package ingredients. Drain and add a drizzle of sesame oil to the noodles to keep them from sticking together.

3. Heat a thin layer of sesame oil in a large skillet over medium heat. Cook the shrimp in an even layer for about 2 minutes on each side, adding salt, pepper and any seasoning of your liking. Remove and set aside.

4. In the same skillet, add the sliced bell pepper and stir occasionally until soft, about 5 minutes.

5. Add the cooked shrimp, noodles and sauce into the pan and toss to combine all the ingredients and coat with the sauce.

6. Remove from the pan and serve with green onions and chopped peanuts as garnish. Enjoy!
