Broccoli Apple Salad

Broccoli, walnuts, cranberries, carrots and apples combine to make a refreshing salad full of delicious flavors! The creamy dressing completed this amazing salad to become an instant favorite of my family. I substituted some of the mayo in the dressing with greek yoghurt to make it more healthy. The crunchy ingredients make this salad truly satisfying.

What you need:

4 cups fresh Broccoli florets

2 large apple chopped

1/2 cup shredded carrots

1/4 cup red onions diced

1/2 cup walnuts chopped coarsely

1/2 cup dried cranberries

Dressing:

1/2 cup mayonnaise (Light)

1/2 cup greek yogurt

2 tbsp lemon juice

1/4 tsp salt

1/4 tsp pepper

How to make:

  1. In a large bowl combine broccoli, carrots, red onion, apples, walnuts and cranberries.

2. Whisk together mayo, greek yogurt, lemon juice, salt and pepper.

3. Add the dressing to the salad and toss to coat. Chill until ready to serve!
