Vegetable loaf

My sister makes the most wonderful vegetable loaf!   I got the recipe from her and have been making it for the last few years to rave reviews.  This delicious twist on a meat loaf is always a party favorite and enjoyed by both vegetarians and carnivores.  It contains the goodness of vegetables and can be served with your choice of salad and/or soup to make a healthy and fulfilling meal.

How to make:

1 cup flour

1 tsp baking powder

2 eggs

1 tsp of sugar

2 cup finely cut coriander/cilantro leaves

1 medium finely chopped onions

1 finely chopped bell pepper

1 cup green peas (fresh or frozen)

1/2 cup finely cut broccoli

1″ piece of ginger grated

1 finely chopped green chilli (if you want some heat)

1/2 cup oil

1/4 cup milk

Salt to taste

How to make:

1.  Beat eggs and oil together.  

2.  Add the baking powder to the flour and sieve together.  Add it to the egg and oil mixture a tablespoon at a time and keep stirring till it is blended well.

3.  Add the peas, bell pepper, onion, broccoli and ginger and mix well.  Toss in the sugar and salt and stir well.

4.  Put in a prepared baking tin and bake in a preheated oven at 350 degrees F for 35 minutes.

5.  Serve hot with salad or soup.  You can also eat with a side of green chutney.
